I decided a while ago that one of the best places to eat for lunch in San Diego is a health food store called Jimbo’s Naturally. Not only do they offer a wide variety of vegan grocery items, they have an amaaazing deli. They serve meat, but they also have a gleefully large array of vegan salads, hot bar items, baked goods, and sandwiches. My favorite is called the “Soy Delicious,” which includes “Turkey style slices, fake bacon bits, eggless mayo, organic lettuce, organic tomato, sprouts, organic onion, (and) pickles on 6-grain bread.” It is HUGE and filling, comes with tortilla chips, and only $5.50. Unfortunately, the nearest Jimbo’s is 20-25 minutes away from my house, so unless I drive to work (I usually take a commuter train), I rarely get to eat one of these. This weekend the b-fry and I decided we’d try making them ourselves, to great success!
If you were to ask me “Eve, what are the two most important things in a sandwich?” I would answer quickly and without pause, “Why, flavour and texture of course!” (I apparently also start using spellings from the OED when posed sandwich questions.) Seriously though, the greatest things about this sandwich? The “bacon” bits and pickle. Maybe that spawns from the fact that they’re both salty and crunchy, but they would taste good without all that salt, I swear. Anyway, we were lucky enough to find soy bacon bits in bulk and spent most of the money it takes to make these sandwiches on the really good refrigerated pickles. For the other ingredients we used Hickory Smoked Tofurkey slices, Vegenaise, romaine, sliced roma tomatoes, and because I am a glutton I added ripe avocado.
Not only was the finished product delicious, it cost less! It was also easy to make the sandwich a bit healthier by controlling how much vegenaise used (one flaw of the store-bought version – the thick layer of mayo, which can be a little off-putting sometimes.)
I wish I had a picture to post, but the sandwiches were so delicious my mouth didn’t give them a chance to pose for the camera. Oops! Not to worry, I’m sure I’ll be making them again soon, so all hope is not lost.
